The live birds are removed from the crates and loaded into stainless steel shackles. The shackle wheel is rotated manually by the operator. The satellite unit, once full, is then advanced to the killing station. The operator then loads the next satellite unit whilst the first birds are quietening (to ensure better bleeding) in preparation for killing. Now, the operator moves to killing and bleeding process.
Killing:The operator manually kills the bird over the blood trough, then the satellite unit is advanced to the next station, also over the blood trough, to complete the bleeding.
Bleeding:The operator then returns to station '2' to slaughter the next satellite of birds, after which he returns to station '1' to load a new batch of live birds onto the shackles to repeat the process. The head of the hand killed birds, after scalding and plucking, is also removed by hand to cut down the meat losses. The process is now followed by Scalding.
